Meet Pusser’s Rum Bartenders on Deck: Joseph (Jojo) Fahey & Aneel de Albuquerque
Pusser’s Rum Bartenders Joseph (Jojo) Fahey & Aneel de Albuquerque of Burwell’s Stonefire Grill in Charleston, South Carolina.
Tell me about yourselves. What are your backgrounds, and how did you end up as bartenders?
Jojo: I’ve bartended and consulted for restaurants all over the country/world for a long time. I spent 7 years in the US Virgin Islands and BVIs. I’ve been in Charleston bartending for over a decade. I was the man at Speakeasy until it burned to the ground a few years back. Since then I’ve been the head bartender / mixologist at Burwell’s.
Aneel: I’ve been a musician most of my life. I’ve spent years touring around the world, drinking everything and everywhere I can. I’ve bartended and worked in restaurants between tours and most recently started bartending with Jojo at Burwell’s.
What’s your favorite Pusser’s Rum cocktail, and what is the recipe for making it?
Both: We are featuring a new Pusser’s cocktail on our menu this month. We call it the “Walk the Plank.”
Pusser’s Rum Cocktail: Walk the Plank
2 oz Pusser’s Rum
1 tsp frozen Coco Lopez
1/4 oz Citrus Simple Syrup
A dash of Key lime guava bitters
1 oz fresh orange & pineapple juice
Topped with fresh nutmeg and frozen Coco Lopez Benne Wafer
Served in a martini glass.
Why are you a Pusser’s fan? Why choose Pusser’s Rum over another spirit?
Jojo: I worked at the Soggy Dollar in Jost Van Dyke where the Painkiller was invented. I think that’s as good of anyplace to become a Pusser’s fan.
Aneel: I grew up in the Caribbean. I’m pretty sure my blood is 42% rum. Anytime someone asks for a bartender special they get some form of rum punch (usually with Pusser’s).
Where do you find inspiration for your cocktails?
Jojo: I have a love for the business and have learned a lot over the years on what works and what does not. I’ll spend an extra hour before a shift soaking pineapple in scotch and grilling it to add that extra kick to a drink. Charleston is a great town to get inspired to drink… and make drinks.
Aneel: My inspiration has come from drinking around the world. I remember all the certain things I liked from different cocktails in the most random places. That and when me or Jojo have an idea, we bounce ideas off each other for a week (even if it’s a joke) until we both just high five and say “Hell yes. That’s it.”
Please tell me about your greatest achievement in relation to the spirits industry.
Jojo: I’ve won numerous national bartending awards and quite a few drink challenges.
Aneel: I’ve drank in 48 out 50 states and 37 countries. Does that count?
What’s an interesting fact about yourself?
Jojo: I’m from Kansas City. I’ve been a proud Royals fan my entire life, even when they were “subpar.”
Aneel: Well if we’re talking sports I’m a raging Liverpool fan. If there’s a game on and I’m bartending, I apologize for the language and (to use Jojo’s word) “subpar” service.
